What makes coffee go stale?

Coffee is a complex product containing over 800 aromatic compounds that give it flavour and aroma. These compounds are volatile, meaning they break down or escape over time. Understanding what causes this helps you store coffee properly.

The four enemies of coffee freshness are oxygen, moisture, heat, and light. Oxygen causes oxidation, breaking down flavour compounds and creating stale, cardboard-like tastes. Moisture can cause coffee to absorb unwanted flavours or even promote mould growth.

Heat accelerates chemical degradation, while UV light breaks down organic compounds. Pre-ground coffee goes stale much faster than whole beans because grinding dramatically increases surface area exposed to these elements.

Best way to store coffee beans

Store your coffee in an airtight container in a cool, dark place — a kitchen cupboard away from the oven or window is ideal. The original bag works well if it has a one-way valve and zip seal; otherwise, transfer to a dedicated coffee canister.

Avoid clear containers that expose coffee to light. Vacuum canisters are excellent if you have one, as they remove oxygen which is the primary cause of staleness. Keep the container at room temperature — refrigeration introduces moisture issues.

Buy coffee in amounts you'll use within 3-4 weeks. Even with perfect storage, coffee quality gradually declines after roasting. Smaller, more frequent purchases mean fresher coffee in your cup.

Should you freeze coffee beans?

Freezing coffee is controversial, but when done correctly, it can extend freshness significantly. The key is freezing in small, airtight portions and only thawing what you'll use immediately — never refreeze coffee.

Divide your coffee into weekly portions, squeeze out excess air, and freeze in airtight bags or containers. When ready to use, remove a portion and let it come to room temperature before opening to prevent condensation.

For most home coffee drinkers, though, simply buying fresh and storing properly is more practical than freezing.

How long does coffee stay fresh?

Whole bean coffee stays fresh for several weeks, or even longer when stored properly. It typically tastes best after an initial resting period, once the coffee has had time to degas. Over time, the flavours will gradually fade and become less vibrant, though the coffee will still be safe to drink.

Ground coffee loses freshness quickly. The increased surface area means aromatics escape rapidly and oxidation accelerates dramatically. If you don't have a grinder, buy smaller quantities of ground coffee and use within a few weeks.

Check the roast date on your coffee bag — this is more useful than a "best before" date. Speciality roasters include roast dates so you know exactly how fresh your coffee is.
